Birkenhead chef James Bratton of Moxie Restaurant has been named a Beef + Lamb New Zealand Ambassador Chef, recognising top culinary talent.
For James, the appointment is about more than just a title. “It feels special to become part of the Beef + Lamb story that’s been told for so long,” he says. “I’m especially excited to learn more about the provenance of the product and really understand the journey behind it.”
A Birkenhead favourite, with a simple philosophy
If you’ve dined at Moxie, you’ll already be familiar with James’ style. His food philosophy is grounded in clarity, balance, and respect for ingredients. There’s no overcomplicating, just a focus on letting quality produce speak for itself.
That approach has made Moxie a local favourite, and it’s also behind one of his most talked-about dishes: his Beef Wellington. Rather than reinventing the classic, James has refined it – perfecting the seasoning, texture, and proportions to create something that feels timeless, yet distinctly New Zealand. It’s a dish that quietly showcases his belief that great cooking is often about restraint, and knowing what to leave out.
